Dishes to know on this menu

Tofu (bean curd): Pressed soybean curd, from custard-soft (for mapo tofu and soups) to firm (for stir-fries and braises). Fried tofu puffs soak up sauce; tofu skin (yuba) is the sheet lifted off simmering soy milk, rolled and braised or fried as a "vegetarian duck". On this menu as: 4. Fried Bean Curd · 9. Seafood Tofu Soup · 17. Vegetables with Bean Curd Soup.
Lo mein: Soft, thick egg noodles boiled and then tossed, not fried, with sauce, vegetables and a protein. Where chow mein is about crispness, lo mein is about slippery, sauce-coated noodles. On this menu as: 113. Oyster Lo Mein · 114. Pork Lo Mein or Rice Noodles · 115. Chicken Lo Mein or Rice Noodles.
Szechuan-style (American menus): The older Wade-Giles spelling of Sichuan. On American-Chinese menus "Szechuan beef" or "Szechuan chicken" signals a spicy garlic-chili sauce with vegetables; on a Sichuan restaurant's menu the same word means the real thing, so expect Sichuan peppercorn and real heat. On this menu as: 27. Szechuan Chicken · 60. Szechuan Beef · 90. Eggplant Szechuan Style.
Black bean sauce: Salted, fermented soybeans (douchi), mashed with garlic and ginger into a pungent, savory sauce. Classic with clams, spare ribs, bitter melon and beef with peppers. On this menu as: 48. Shredded Pork Bitter Gourd with Black Bean Sauce · 71. Squid with Black Beans · 74. Oyster with Black Beans.
Fried rice: Day-old rice stir-fried with egg, scallion and whatever the kitchen adds. Yangzhou (Yang Chow) style means shrimp, char siu and peas, and is the version most menus mean by "house special". Good fried rice is dry and separate-grained, never wet. On this menu as: 108. Pork Fried Rice · 109. Chicken Fried Rice · 110. Beef Fried Rice.
Kung pao: Diced chicken (or shrimp, tofu) stir-fried with dried chilies, Sichuan peppercorns, scallion and peanuts in a sweet-sour-savory glaze. The Sichuan original is dark, tangy and numbing; the American-Chinese version tends to be sweeter, saucier and heavier on the vegetables. On this menu as: 54. Kung Pao Beef · 64. Kung Pao Shrimp · 7. Kung Pao Chicken.
